Just a quick heads up for one of my go-to recipes: my best girl Isa Chandra Moscowitz’s chickpea cutlets. Wheat gluten is yet another thing I’ve only been able to buy in the last couple of years, but when I do buy it I compose lengthy sonnets and cook magnificent seitan roasts for about sixteen people. Guys, like, forget sausages made out of tofu and shit, don’t even waste your time; don’t sit around eating Sadness Burgers when wheat gluten gives veggie mains the BEST texture. You’re welcome.
